Mediterranean Turkey Loaves
A few weeks ago on Instagram, I posted the photo below and several people asked for the recipe for the Mediterranean turkey loaves. I've made this recipe twice now and it's so good. It's also incredibly easy and relatively quick to put together.
I was in my twenties when I first discovered Greek and Mediterranean flavors, and I remember that after my first gyro, I was angry that I had not realized such amazing tastes existed before. My love affair with feta, hummus, shawarma, chickpeas, tzatziki sauce has never waned. I am constantly trying to find recipes, ones I can actually make that utilize the ingredients and flavors I love.
I'm not a big fan of meatloaf. I didn't eat meatloaf a lot growing up and it's never been the kind of thing I crave. But this is not really meatloaf at all. These turkey loaves are something else and that something is awesome. I altered the original recipe from Iowa Girl Eats because I don't like red onions, and M isn't a big fan of olives but if you like either, you could add 1/4 cup of red onions and 1/4 cup of kalamata olives cut in half and mix it in with the egg, turkey, bread crumbs etc.
I have to tell you that I was unsure if the topping was necessary. I mean I like tomatoes and cucumbers and I like them together in salads but it seemed like extra work that I would find didn't add anything to the dish. Boy, was I wrong. All the flavors just work together really well and I couldn't imagine eating this without the little bit of acid that the topping brings. I think you'll agree.
What You Need:
1lb ground turkey breast (This will create 4 loaves). 1 egg 1/4 cup crushed Rice Chex. You can use panko bread crumbs but the Chex makes it gluten free and is less calories. 1/4 cup feta cheese, plus more for topping 1/4 cup + 2 Tablespoons hummus, divided 2 cloves garlic, minced 1/2 teaspoon dried basil 1/4 teaspoon dried oregano salt & pepper
For the topping:
1/2 small cucumber, peeled, seeded and chopped 1 large vine-ripened tomato, chopped 2-3 Tablespoons fresh chopped basil juice from half a lemon
1 teaspoon extra virgin olive oil salt & pepper
- Preheat oven to 425 degrees. Line a baking sheet with foil then spray well with non- stick spray and set aside.
- In a large bowl, combine ground turkey, egg, crushed Chex Mix, feta cheese, 2 Tablespoons hummus, garlic, dried basil, oregano, salt, and pepper. Mix until just combined.
- Divide mixture into 4 equal-sized portions then form into loaves and place on prepared baking sheet. Spread 1 Tablespoon remaining hummus over each loaf then bake for 18-20 minutes, or until no longer pink in the center.
- Meanwhile, combine topping ingredients in a bowl. Refrigerate until loaves are ready to eat. Spoon over cooked meatloaves. Add a small spoon full of feta over the topping and then serve.
